Gluten-Free Blueberry Scones
I’m starting the new year off with the most delicious gluten-free and refined sugar-free blueberry scones! These scones have all the yummy flavors and textures of a classic scone but without all the guilt. Sign me up!
It’s a new year and everyone is still sticking to their New Year’s resolutions of eating healthier, including me! I made a list of goals for 2022, and tried to make them specific, yet attainable.
Read my bible every day.
Read 12 books this year (1 per month). I am alternating between fiction, historical fiction, parenting, and Christian books. I just finished my first book for January (The Hunting Party by Lucy Foley). It was rather dark, but I somehow couldn’t put it down. A few that are on my list next are Habits of the Household by Justin Whitmel Earley, A Gentleman in Moscow by Amor Towles, The Last Thing He Told Me by Laura Dave, and Loving by Leading by Den Trumbull.
Put my phone away more. I want to spend less time on my phone so I can be present with Robert and those around me.
Create more recipes and get out of my comfort zone when it comes to videos, cookie events, and blog content.
Now back to these scones. Let’s talk about the components:
Almond flour
Oat flour (you can make this yourself by grinding rolled oats)
Tapioca flour
Coconut sugar
Baking powder
Sea salt
Unsalted butter
Fresh blueberries
Zest of 1 lemon
Milk (either oat, almond or cows milk)
My favorite part about making scones is that you can get creative and add whatever ingredients you have on hand. Don’t have fresh blueberries? You can add blackberries, apples and cinnamon, chopped chocolate and orange zest, or more lemons and poppy seeds!
