Banana Chocolate Chip Blender Pancakes

The most delicious and healthy Banana Chocolate Chip Pancakes made in the blender! The easiest breakfast that we make almost every morning in my house!

My go-to easy breakfast has always been blender pancakes. Maybe I’m just lazy and don’t feel like messing up a bunch of dishes right when I wake up, but making pancakes in a blender is SO much easier.

I always have bananas, and the rest of the ingredients are staples, so we make these pancakes almost every morning. You can leave out the chocolate chips if you’re wanting simple pancakes, but they sure do make these a healthy treat.

I love doubling this recipe and keeping these in the fridge or freezer. It makes my mornings so much easier when I can just pull out a few pancakes for Robert! He LOVES these so much.

They’re only sweetened with coconut sugar, and are organic, paleo, gluten-free, and made without weird ingredients. They’re the perfect addition to these pancakes because they melt so perfectly and make little chocolate puddles. YUM.

Banana Chocolate Chip Blender Pancakes

Ingredients

  • 1 large banana
  • 1 large egg
  • 1/2 cup milk (almond milk, regular milk, & oat milk will all work)
  • 1 tablespoon pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon olive oil
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chip (I used Hu Kitchen chocolate gems)

Instructions

  1. In a blender, combine all ingredients except the chocolate chips, and blend together until smooth. Stir in chocolate chips.
  2. Heat a skillet over medium heat. Melt butter or coconut oil, and once the pan is hot, add a scoop of pancake batter. Cook for 2-4 minutes on each side or until golden brown. Remove from skillet and top with more chocolate chips and sliced banana. Top with maple syrup and enjoy!

Notes

You can easily double or triple this recipe and make enough for the week or to freeze. To freeze, simply let the pancakes cool and freeze in a large ziplock freezer bag for up to 3 months.
