Healthy Spice Cake
The most delicious and HEALTHY Spice Cake with Maple Cream Cheese Frosting! This cake is gluten-free and refined sugar-free but you would never know!
This moist and tender spice cake is the perfect morning treat with coffee. Daniel and I have been eating it every morning, afternoon and night. It's THAT good.
I don't eat gluten-free but I'm all for a recipe that is made with oat flour instead of regular.
Oat flour gives this cake the perfect crumb and flavor. You can buy it at the grocery store, online here and here, or you can even make it yourself! Simply add regular oats to a food processor or coffee grinder and blend until they are the consistency of flour. If you have a major intolerance to gluten, you can buy certified gluten free oats.
I know, I know, most people hear the word 'sugar-free' and freak out but I promise you this cake is as sweet as it can be. Coconut sugar is what I used to sweeten the cake and it almost has the consistency of brown sugar. You cannot taste the coconut sugar or coconut oil, don't worry!
For the cream cheese frosting, simply combine cream cheese, maple syrup, vanilla and cinnamon. So easy and NO SUGAR!
Top with toasted pecans if desired and enjoy this healthy spice cake!

Healthy Spice Cake
ingredients:
- 1 1/2 cups unsweetened applesauce
- 1/2 cup coconut oil, melted before measured
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup coconut sugar
- 2 cups oat flour, you can buy this at the store or make it yourself by grinding regular oats
- 8 ounces cream cheese, softened
- 4 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Toasted chopped pecans if desired

How to cook Healthy Spice Cake
- Preheat oven to 350 degrees and line an 8×8 baking pan with parchment paper on the bottom and sides. This makes for easy cleanup.
- In a large bowl, combine the applesauce, melted coconut oil, eggs and vanilla. The coconut oil can solidify when mixed with the cold eggs so I like to place my eggs in a bowl with warm water for about 5 minutes to bring them to room temperature.
- Add in the baking soda, baking powder, spices and salt and mix to combine.
- Add in the oat flour and coconut sugar and stir until smooth.
- Pour batter into the lined baking pan and bake for 25-30 minutes or until set and a toothpick comes out clean. Every oven is different so watch the cake carefully after 25 minutes. Remove from oven and cool completely before frosting.
- In a mixing bowl fitted with a paddle attachment, beat the cream cheese and maple syrup on medium-high speed for 1-2 minutes or until light and fluffy. Add in the vanilla and cinnamon and mix to combine. Spread over cooled cake, top with toasted chopped pecans if desired and enjoy!
