Healthy Monster Cookies (Gluten-free)
These Healthy Monster Cookies are soft, chewy, and made with healthier ingredients like natural peanut butter, coconut sugar and oats!
You might be asking, "what is a monster cookie"? It's a peanut butter cookie loaded with everything but the kitchen sink... or just oats, m&m's and chocolate chips!
For the past few weeks, I've been working to create the perfect HEALTHIER version of this delicious cookie. Baking with healthier ingredients can sometimes be tricky and I made over 8 batches of dough until I found the cookie that was everything I wanted and more.
To make these cookies Gluten-free and refined sugar-free (minus the m&m's), here's what I used:
Natural peanut butter with just peanuts+salt
Melted butter (you can also use ghee or coconut oil)
Eggs
Oats-you can use certified gluten-free oats or any type of old fashioned oats
Baking soda
Dark chocolate chips (I love Lily's or Enjoy Life)
Flaky sea salt (my favorite is Maldon)

Healthy Monster Cookies
ingredients:
- 1 cup natural peanut butter (just peanuts and salt)
- 2 tablespoons melted unsalted butter
- 2/3 cup coconut sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 3/4 cup old fashioned oats
- 1 teaspoon baking soda
- 1/4 cup dark chocolate chips
- 1/4 cup M&M’s
- Flaky sea salt for sprinkling on top

How to cook Healthy Monster Cookies
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, mix together the peanut butter, melted butter, coconut sugar, vanilla and eggs. Add in the oats, baking soda, chocolate chips and M&M’s and stir to combine.
- Use a large ice cream scoop to scoop the dough into balls and place on the baking sheet 3 inches apart (these cookies spread quite a bit). Gently press the cookies down to flatten if you want thinner cookies. Place a few extra chocolate chips and M&M’s on top of the cookies and sprinkle with sea salt. Bake for 8-10 minutes or until the edges are slightly brown. They may look slightly underdone but they will continue to bake one they’re removed from the oven. Let them sit for 5 minutes before transferring to a wire rack to cool completely.
