Healthier Carrot Cake Cupcakes with Cream Cheese Frosting
Carrot Cake has always been my family's favorite dessert. We have it for almost every holiday, birthday, and celebration because it is that one dessert we can all agree on. I give all the credit to my mom for making us like such a healthy, vegetable-filled dessert ;)My mom was a lot like me growing up, or I guess I was a lot like her... She started baking from an early age and got the carrot cake recipe when she was in COLLEGE! She was at a dinner party and a lady served the most amazing carrot cake and my mom wrote down the recipe. How cute is that? She has always taught us, "it never hurts to ask."I have made that recipe so many times and it is truly unlike anything else. I decided to play around with it and create a healthier version for those who are wanting to cut back on sugar and eat a little bit healthier. I substituted coconut oil for the oil, white whole wheat flour for the all-purpose flour, and honey for the sugar.Some of you may remember when I took a poll about raisins on my Instagram story. Raisins or no raisins in your carrot cake? The majority voted NO raisins and I'm right there with you. You can definitely add them to the batter before baking and I promise I won't judge you.I had the privilege of making these cupcakes for Gal Meets Glam, my all-time favorite blog. Julia and Thomas are two of the kindest people I've ever met and I am thrilled to be working with them. I met Julia when I first moved to Charleston and we got to know each other over several fun coffee dates. Her story of how she started Gal Meets Glam is incredible and was so inspiring to me.
